All of our white spirits start with a grape neutral base, made from the waste materials of the local wine industry.

When adding a botanical profile, balance is our ulitmate goal. We choose vapor infusion to ensure the quality of our botanicals is never natured, and distill individual botanicals separately to ensure complete control to achieve perfect balance.

A floral and fruit-forward pink gin modellen on traditional dry style pink gins with no added sugar, replicated with uniquely Australian botanicals.

About 78° Sunset Gin:
Unique Australian native botanicals such as Strawberry Gum & Rosella give this gin floral aromatics & complex notes of ripe red berries, plum & strawberry. Bush Apple provides tart, fruity nuances & a smooth, dry palate with undertones on raspberry, rhubarb & plum.

A complex & savoury gin vapour infused with 12 traditional London dry botanicals at a perfect 78° – each selected specifically for their purity & quality, and collected at the height of their natural growing season.

About 78° Classic Gin:
Crafted with a nod to a classic London dry style, but with a unique Australian signature. Bright & fresh aromatics from juniper & Australian citrus are balanced with clove, cinnamon, coriander & nutmet, adding rich & warming spice undertones & savoury herbaceous flavours. The palate is softly balanced while the finish is crisp & clean.

Australian whiskey

Uniquely Australian in style, our whiskey is made from locally sourced, single paddock unmalted barley, aged in hand-selected local wine casks & produced with a focus on quality, bold flavour and sustainable practices.

Nose:
Bright, fresh grain along with sweet notes of caramel, vanilla, dried fig & apricot. Christmas cake & bright spice notes of cinnamon, ginger & clove.

Taste:
Chocolate crackle, toasted muesli, with banana pancakes & dried apricot. Like a summer evening on the farm, tucking into some cinnamon oat biscuits and a good cup of tea.

Finish:
It’s Christmas night & you’ve had more than your fill of Christmas cake for dessert. A lingering spicey finish with a spike of sweet caramel & vanilla right at the end. Something familiar that just warms the soul.
